ALMOND CHICKEN SALAD


Almond chicken salad


If desired, garnish with lime slices, avocado, and red sweet pepper.

Almond Chicken Pasta Salad

INGREDIENTS:
  • 4 cup   Cooked, cubed chicken
  • 2 med   Apples, cored & coarsely chopped (2c.)
  • 8 oz     Corkscrew or bow tie pasta, cooked & drained
  • 1  (8 1/2 oz.) can   Pineapple chunks, drained
  • 1/2   cup halved seedless grapes
  • 1/3   cup bias-sliced celery (about 1 stalk)
  • 1/4  cup   Thinly sliced green onion
  • 1/4 cup   Mayonnaise or salad dressing
  • 1/3 cup   Low-fat plain yogurt
  • 1 tbl   Sesame seed
  • 1 tsp   Finally shredded lime peel
  • 3 tbl   Lime juice
  • 1 tbl   Honey
  • 2 tsp   Grated fresh gingerroot or ground ginger
  • 1/4 tsp   Salt
  • 1/2 cup   Toasted sliced almonds
  •                lettuce leaves, lime slices, avocado slices, diced red sweet pepper (optional)

METHOD:

In a large bowl, toss together cooked chicken, apples, cooked pasta, pineapple, grapes, celery, and onion

For dressing, in a mall bowl combine the mayonnaise or salad dressing, yogurt, sesame seed, lime peel, lime juice, honey, gingerroot, and salt.

Pour over the pasta mixture, toss gently to combine, Cover and chill. Serve on lettuce-lined plates. Top with almonds.
